Community and collection logos don't respect aspect ratio

Describe the bug

Community and collection logos are rendering at 500px x 500px, so images originally in landscape or portrait aspect ratios appear stretched either horizontally and vertically (or both). This appears to primarily affect responsive viewers - devices such as android etc may display as intended.

Tested on DSpace 8.1 and 9 (demo site).

To Reproduce

Steps to reproduce the behavior:

1. Edit a collection or a community and add an image to serve as the logo. The image should be formatted in portrait or landscape (example image attached).
2. View the collection and observe that the image is stretched horizontally or vertically (for example https://demo.dspace.org/handle/10673/1595).

Expected behavior

Community and collection logo images should retain the aspect ratio of the original image.
