Replace em dashes with ordinary punctuation
Rewrites the nine em dashes in the two README files as full stops, commas, colons or a relative clause, whichever suited the sentence, rather than swapping in a hyphen everywhere. Six were in README.md and three in test_files/README.md. Also spells out the one degree sign as "90 degrees", matching how the Auto Smooth section already writes it. The arrows in menu paths like Edit > Preferences are left alone, since they are ordinary documentation notation for a menu path.
