The `pcsx2` app name for version 2.8.0 is "PCSX2-v2.7.525?v2.8.0.app", while previous versions have used a "PCSX2-v2.8.0.app" format. This adds a wildcard to the `app` value to cover the additional text that we may not be able to reasonably account for otherwise. We should return to the stricter `app` value if/when upstream returns to the previous format, so I've left an explanatory comment.
