docs: restructure the README around badges, quick links, and installation

Badge pills up top (release, CI, docker publish, GHCR multi-arch, stars,
Node 24+, MIT), a quick-links table, and a compact emoji feature list. The
install paths now lead the page as three ranked options (GHCR/compose, from
source, process manager) with the deep containerized-panel notes folded into
a collapsible block; the detailed feature tour, networking, configuration
reference, internals, and security notes all move below the fold. No content
removed - reordered and tightened.
