docs: point docs and examples at v1.1.0 and layer version 30 - #871

The v1.1.0 release published the 1.1.0 image to public.ecr.aws/awsguru and layer version 30 in all 32 standard-partition regions plus both China regions, so update every reference that still pinned 1.0.1 / layer 28. Layer version 29 is skipped: it was cut by the July release that was later reverted (#793), so 30 is the first published layer for this release. Also fix the commented-out alternate layer ARN in examples/javalin-zip, which pinned layer 20 under the wrong account id (753240598076). Verified before updating: the 1.1.0 manifest list exists for linux/amd64 and linux/arm64, and GetLayerVersionByArn reports version 30 as "Layer for AWS Lambda Adapter {x86_64,arm64}: 1.1.0" in every region reachable without opt-in.
