Update to this expedition. Came up with a solution after a lot of trial and error that uses Alpine via LIMA with VirtioFS instead of Ubuntu with SSHFS. Takes up about 1 gb of space and is quite resource light, and has faster writes than the last method(s), which was important for me on a base model M1 MacBook Air with 8gb ram and 256 gb disk space. Will update the guide soon, and then try to create a PR as you suggested.
