docs: state which demo Spaces are actually awake (#170)

README and RELEASE_STATUS said the three-node topology was "deployed live
on HF Spaces". Two of the four Spaces answer: center and edge-spb are
RUNNING (200), edge-ekb and the standalone demo are PAUSED (503) because
the free tier keeps three cpu-basic Spaces awake and the account runs
other projects. The deployment is complete; the compute quota is not.

RELEASE_STATUS gains a "Live demo surfaces" table with the probed stage
of each Space and the date of the probe, and notes that the cross-node
evidence was captured while ekb was awake.

Closes F3a of the 07.07 audit (plan_07_07_26.md, S3).
