doc: The Code of Conduct named no one to report to

Removing "TRIOVEGA GmbH or Simon " from the enforcement paragraph left
the sentence ending in "Walz.", so the org-wide Code of Conduct - the
one every repository now inherits - gave no contact at all.

Names contact@simonwalz.de, the address SECURITY.md already uses.
