ci: drop the commented-out platforms lines

They record an intent that is wrong. Uncommenting them would fail the
installer-factory build outright - Debian has grub-pc-bin and grub-efi-amd64-bin
for amd64 and i386 only - and an arm64 installer ISO could not boot in any case,
because no ARM target has an ISO boot path.

Which architectures each image is published for now has a reason written down:
brain decision 0012, multi-arch for the tool images, single-arch for the ones
that are themselves the product.
