Adds OPOS to the open-source projects section, in alphabetical order (between Open Interpreter and Pezzo), using the list's standard entry format (one-line description plus a details block with category, description, and links).

OPOS is a company-in-a-repo operating system: the organization — mission, departments, roles, tasks — lives as markdown files in a git repository and is executed by Claude Code agents, with consequential decisions routed back to the founder for approval. Distributed as a Copier template.
