ui: show every chip family on library, substitute and neighbor cards

Molecule cards across the library grid, substitutes and structural neighbors show an inconsistent subset of what we know — some show taste chips, some aroma, none show the full picture. Now that every molecule has taste + aroma + mouthfeel + safety reads, the cards should surface all of them consistently, with the same visual language agreed in the chip-styling issue.

The point is that a card should let you judge a candidate without opening it.

Shipped in #269. Substitute and neighbor cards now carry mouthfeel alongside taste and aroma.

Read straight off the profile matrix — the mouthfeel columns were already in the 178-dim vector, so it costs no extra inference — and each sensation must clear its own calibrated threshold and be confident-capable before it renders. That means a card can never show a sensation the modal would call indicative, which was the failure mode worth avoiding here.

Mouthfeel tags are visually marked (leading dot, solid border) so they read as a different modality rather than another aroma note.
