Broad patterns + one explicit allow (!flavor_volatiles.csv) replace the enumerated dataset names — no NC/proprietary dataset filenames advertised in the public repo, same accidental-commit protection.

Replace specific dataset entries with broad patterns (*.csv/*.xlsx/*.parquet etc.)
plus an explicit allow for the curated input (flavor_volatiles.csv). Avoids
advertising dataset filenames in a public repo — including NC/proprietary sets we
deliberately don't use (FlavorDB, umami list), whose names were only preventive
guards. Broad patterns catch accidental commits just as well.
