Risotto is meditation in motion. It requires presence, patience, and attention. You cannot rush it. You cannot multitask while making it.
The Principles:
- Toast the rice — Until edges are translucent
- Wine first — It should absorb completely
- Warm stock — Always. Never cold.
- Ladle by ladle — Patience
- Stir with purpose — Releases starch, creates creaminess
- Al dente — Slight bite in the center
- Mantecatura — Final butter/cheese incorporation, OFF heat
- All'onda — Should flow like a wave, never stiff

- 1½ cups Arborio or Carnaroli rice
- 5 cups beef or chicken stock, warm
- Large pinch saffron threads (don't skimp)
- ½ cup dry white wine

- ½ cup Parmesan, finely grated
- Salt and white pepper
Traditional Addition:
- 2 oz bone marrow (if you have it — see Chapter 14)
- Bloom saffron — In ½ cup warm stock for 15 min minimum.

- Add wine — Stir until completely absorbed.
- First ladle of stock — Stir until absorbed.
- Add saffron stock — This is where the color comes from.
- Continue — Ladle by ladle, 18-22 min total, stirring frequently.
- Taste — Rice should be al dente.
- Remove from heat — Add butter and Parmesan. Stir vigorously. This is the mantecatura.
- Rest — 2 minutes covered.
- Serve — Should be all'onda — flowing, not stiff.
If using bone marrow: Roast a split marrow bone at 450°F for 15 min. Scoop the marrow and stir into the finished risotto along with the butter and cheese.

- 1½ cups Arborio rice
- 1 oz dried porcini mushrooms

- 5 cups mushroom/vegetable stock, warm
- ½ cup dry white wine
- 3 tbsp garlic-infused olive oil (IBS-safe)
- 2 tbsp butter
- ½ cup Parmesan, grated
- Fresh thyme
- Salt, pepper
- Rehydrate porcini — In 1 cup warm water, 20 min. Strain and SAVE the liquid. Chop porcini.
- Sauté fresh mushrooms — In 1 tbsp oil until golden. Set aside.
- Toast rice — In remaining oil, 2-3 min.
- Wine — Until absorbed.
- Add porcini liquid — Filtered through cheesecloth.
- Continue with stock — Ladle by ladle, 18-22 min.
- Add mushrooms — Fresh and rehydrated, with final stock addition.
- Finish — Butter, Parmesan, thyme. Off heat.
- Taste and season.
- Use only button mushrooms or well-cooked oyster mushrooms (lower FODMAP)

Seafood:
- ½ lb large shrimp, peeled (save shells)
- ½ lb mussels, scrubbed
- ½ lb clams, scrubbed

Risotto:

- 1 cup dry white wine (divided)
- 4 cups fish or seafood stock, warm
- 3 tbsp garlic-infused olive oil

Make Shrimp Stock:
- Toast shrimp shells in dry pan until pink.

Steam Shellfish:
- In separate pan, add mussels and clams with ½ cup wine.
- Cover, steam until opened (3-4 min). Remove shellfish, reserve liquid.

Build Risotto:
- Toast rice in oil.
- Add remaining ½ cup wine.
- Add shellfish liquid first.
- Continue with warm stock, ladle by ladle.
- At 15 min, add calamari.
- At 18 min, add shrimp.
- At 20 min, fold in mussels and clams.
- Finish with butter (no cheese with seafood in Italian tradition).
- Parsley, lemon wedges.

- 1½ cups Arborio rice
- 2 cups butternut squash, ½" cubes
- 5 cups vegetable or chicken stock, warm
- ½ cup dry white wine

- Pinch nutmeg
- Fresh sage leaves, fried
- Salt, pepper

- Dissolve ink — In 1 cup warm stock.

Paella is not risotto. You do NOT stir paella. The goal is socarrat — the crispy, caramelized rice at the bottom of the pan. That's the prize.

- Socarrat is the goal — Listen for the crackle

- ½ cup butter beans (lima)
- 1 large tomato, grated
- 2 tbsp garlic-infused olive oil
- Large pinch saffron
- 1 tsp smoked paprika
- 1 sprig fresh rosemary
- Salt
- Bloom saffron — In warm stock.
- Brown meat — In paella pan with oil. Remove and set aside.
- Add beans — Cook 5 min.
- Add tomato — Cook down, 3-4 min.
- Add paprika — 30 seconds.
- Return meat — Nestle in.
- Add stock — Bring to boil.
- Add rice — Distribute evenly. DO NOT STIR after this point.
- High heat — 5 min.
- Medium-low — 15-18 min.
- Listen for socarrat — Slight crackle means it's forming.
- Rest — 5 min covered with foil.

Washing (essential):
- Put rice in bowl.

Soaking:
- Cover with water.
- Soak 30 minutes (or up to 2 hours).
- Drain completely.
Cooking:
- Combine rice and measured water in pot.
- Bring to boil uncovered.
- Once boiling, cover and reduce to lowest heat.
- Cook 15 minutes. DO NOT LIFT LID.
- Turn off heat. Rest 10 minutes. STILL NO PEEKING.
- Fluff gently with rice paddle.

- Layer remaining rice on top in pyramid shape.
- Poke 5-6 holes with chopstick for steam.
- Wrap lid in towel, cover pot.
- High heat 3 min, then lowest heat 45 min.
Prepare Jewels:
- Sauté barberries with butter and sugar, 2 min.
- Toast nuts if not already.
- Have everything ready.
Assemble:
