We build our docs on the older Sphinx-based stack. The MyST Document Engine is a lot more stable now, and we use it for other foundation-related docs (e.g., compass.jupyterfoundation.org). We should:
- Update our documentation to use the new myst document engine
- Streamline and simplify as much of our docs build as possible
- Update our documentation hosts so that we're building this new setup
- (optional): Along the way see if we can easily enable PR previews
