📜 Description

Updated FabricExample to latest RN version (0.87).

💡 Motivation and Context

Certain issues are available on latest RN versions and it becomes extremely hard to reproduce them. So in this PR I'm updating FabricExample to latest RN version.

Paper example stays on RN 0.81 (paper is not available on 0.82+, so this project will use old version). We can remove example only when we migrate e2e tests to use fabric (#883).

• patched reanimated until Jest tests crash in Reanimated 4.6.0 after the useAnimatedStyle native/web split software-mansion/react-native-reanimated#10478 is available in npm package;
• fixed type mismatches in example app;

Tested on iPhone 17 Pro (iOS 26.5, simulator).
