fix: default ingress valsue

This PR fixes the default value for rke2_ingress_controller

Hi @immanuelfodor thanks for reaching me out. Sure, i will consider this but not in this bug fix PR. ingress-nginx is currently the default option for upstream RKE2. If they will change it, i will be happy to do that as well.
