How do I properly call the function here where I'll be able to use what I did inside maskEvidence to then use bwconncomp, which I'll be using to determine some metrics for the preprocessed image to later run through the AI.

In your function definition (line 32-46), detectEvidence is your function name. Also, "I" is the input variable, and "maskEvidence" is the output variable, only defined in the function definition domain (and used for input in your function and reporting the output from your function in the function definition only).

When you want to call your function, you call its function name, passing the proper variable as input and capturing the output variable. For example:
A = detectEvidence(B)
Where B is an input variable with the right size and type, and the output of the function is stored in variable B.

You can call a function in nested format as well without capturing the output in a variable explicitly.
C = anotherFuntion(detectEvidence(B))
The output of detectEvidence is not stored explicitly and is directly passed on to "anotherFunction" as the input.
