Switch away the Pallets Sphinx Theme

Currently, the pallets-sphinx-theme adopted across the Pallets ecosystem has the following drawbacks:

• Lacks a built-in dark mode
• The sidebar appears at the very bottom on mobile layouts

Therefore, I propose switching to a more modern third-party theme, such as:

• Shibuya
• Furo
• PyData
• Awesome

@davidism If Pallets does not plan to switch to another existing Sphinx theme, are there any plans to improve the current theme to address the issues mentioned above?
