Add a first-party Razorpay payment adapter for @payloadcms/plugin-ecommerce

Motivation

Razorpay is widely used in India for UPI, cards, and other online payments. Adding Razorpay support to Payload Ecommerce would make it easier for developers to build ecommerce applications for the Indian market without maintaining their own payment integration.

Proposed solution

I'd like to contribute a Razorpay payment adapter that follows Payload's existing architecture and supports:

• Creating Razorpay orders and integrating checkout.
• Secure server-side payment verification.
• Webhook handling and payment status updates.
• Integration with Payload's transaction and order lifecycle.
• Tests and documentation.

I'd first review the existing payment adapters to ensure the implementation fits Payload's conventions.

Would this be a useful addition to Payload Ecommerce? I'd be happy to work on the implementation and would appreciate feedback on the proposed approach before getting started.
