Check out full history in the jobs running the turbo extension on the source

Since the expected turbo version is generated on autoloader dump from
`git log -- turbo-ext/src`, the jobs running PHPStan from source with a
prebuilt extension need the same history the compile jobs build it with: in
a shallow checkout the log yields the grafted root commit, so the
generated version never matches the extension. The job-container legs of
turbo-differential additionally need to trust the checkout, or git refuses
to read it and no version is generated at all.
