Usually, this setting work with most sql client api, but it seem like it does not suported by the mssqlserver sink:
The erro message is: ArgumentException: Keyword not supported: 'Command Timeout'.

Command Timeout is not a supported SQL Server connection string parameter, although some clients might support it. MSSQL sink basically passes the string transparently to the underlying SqlClient library.

The command timeout can only be specified programmatically via SqlClients API. Therefore I would suggest to make this configurable as a sink option rather than adding something to the connection string which is not natively supported there.

It could be implemented as a MSSqlServerSinkOption like EnlistInTransaction which is also an element from the connection string (https://github.com/serilog-mssql/serilog-sinks-mssqlserver?tab=readme-ov-file#enlistintransaction).

You could then use it like this in your program:

Log.Logger = new LoggerConfiguration()
    .WriteTo.MSSqlServer(_connectionString,
        sinkOptions: new MSSqlServerSinkOptions
        {
            TableName = _tableName,
            SchemaName = _schemaName,
            SqlCommandTimeout = 60
        },
        restrictedToMinimumLevel: Serilog.Events.LogEventLevel.Verbose,
        columnOptions: options)
    .CreateLogger();

Or you can specify it in a supported config source like appsettings.json.
