cv: switch contact email to the custom domain

Mail server is up, so the placeholder gmail is retired in favour of
mail@shabnamhakimi.com.

Changed in all three documents that set a contact address: cv.tex (which
feeds full, full-public, industry and speaking), resume.tex, and
coverletter.tex. coverletter.tex was not explicitly named in the request
but carries the same contact block, and leaving it on the old address
would have been an inconsistency rather than restraint.

The gmail hits remaining in awesome-cv.cls and awesome-cv-resume.cls are
the upstream author's, not a contact address, and are left alone.

Verified by rebuilding: all five Makefile outputs (cv-full, full-public,
industry, speaking, resume) carry the new address, page counts unchanged
at 12/12/6/3/1.
