improvement(mcp): prepare the hosted MCP server for registry and plugin directory listings

- server.json for the official MCP Registry (ai.sim/sim, streamable HTTP remote at mcp.sim.ai)
- Claude Code and Cursor plugin bundle under plugins/sim with root marketplace manifests; nothing auto-loads for contributors
- One-click Cursor and VS Code install links in the MCP docs, and an MCP server section in the README
