fix: add Linux platform support for CI/CD compatibility

🐧 Cross-platform pixi configuration:
- Add linux-64 platform to pixi.toml for GitHub Actions CI
- Update pixi.lock to include Linux dependencies
- Configure pixi setup action with locked=false for flexibility
- Ensure CI works across macOS (dev) and Linux (CI) environments

🔧 Technical details:
- pixi.toml: platforms = ['osx-64', 'linux-64']
- CI: Use non-locked installation for platform flexibility
- Maintain local development on macOS with CI on Ubuntu
- Cross-platform dependency resolution through conda-forge
