fix: complete migration from Poetry to pixi across entire project

🔄 Comprehensive toolchain migration:
- Update Dockerfile to use pixi instead of requirements.txt
- Modernize README.md to reflect pixi + uv stack
- Update issue templates for pixi workflow
- Fix docker-compose helper scripts
- Remove legacy CI configuration directory
- Fix K8s validation step in CI (use system pip for yamllint)

🐳 Docker improvements:
- Install pixi in container for dependency management
- Use pixi.toml and pixi.lock for reproducible builds
- Update CMD to use pixi run for execution
- Maintain Playwright browser support

📚 Documentation updates:
- Environment Management: Poetry → Pixi + uv
- Issue templates: poetry show → pixi list
- Version reporting: Poetry → Pixi versions

🧹 Legacy cleanup:
- Remove old deployment/ci-cd/ directory
- Update helper scripts for modern workflow
- Ensure all references point to new toolchain

Result: Complete, consistent pixi-based workflow across development, CI/CD, and production
