fix: simplify pixi CI configuration for reliability

🔧 Streamline pixi setup for better CI stability:
- Remove uv from conda dependencies (use pypi only)
- Use latest pixi version for better compatibility
- Simplify CI workflow to reduce dependency conflicts
- Remove complex fallback logic for cleaner execution
