Implement RDM SetFactoryDefaults hook

Add a weak rdm::device::SetFactoryDefaults implementation and wire it into the RDM responder. Updates:

- lib-rdm/src/rdm_device.cpp: new weak default implementation of rdm::device::SetFactoryDefaults() that logs "Not implemented." so platform code can override it.
- lib-rdm/include/rdmdevice.h: declare void SetFactoryDefaults() in the rdm device API.
- lib-rdm/include/rdmdeviceresponder.h: call rdm::device::SetFactoryDefaults() instead of configstore::SetFactoryDefaults() and remove the old configstore declaration.
- lib-configstore/include/configstore.h: minor formatting of kStateNames and add ConfigStore::Reset() to zero the store and mark status changed.

This enables a platform-overrideable factory-reset hook for RDM devices and provides a ConfigStore Reset helper for use when restoring defaults.
